As drought grips Peru, its people are turning to very natural, ancient Incan techniques to conserve water, including what’s known as the slow water technique. In a way, they’re planting water so they can harvest it later. Erica Gies, freelance reporter, National Geographic explorer, and author of the forthcoming book “Water Always Wins,” visited Peru and walked along ancient waterways with indigenous Peruvians.
